Voatsiperifery wild pepper

Voatsiperifery pepper is a plant native to the island of Madagascar. Very small, reddish-brown in color, this small-stemmed pepper has a truly unique fragrance. Its woody aromas are reminiscent of flowers and citrus, making it an ideal complement to fish and seafood dishes. Its slightly sweeter, less pungent flavour than black pepper makes it a great addition to desserts (think of the famous strawberries with pepper). Mixed with other peppers, it's also delicious with red meats. But don't cook it too long, or it will become bitter. As it's not really cultivated and can be difficult to harvest, it's a spice that remains fairly rare.
