Coriander seed is a mild, barely sweet spice. It can be used generously and blends well with a wide range of dishes. Whole, it flavors marinades. Mixed with other crushed spices or simply with mustard seeds, it can also be used to form crusts on meats and fish. Ground, it can be included in most Indian and North African dishes. The Indian variety, oval-shaped and slightly paler, has a much more lemony aroma, making it the ideal complement to fish, poultry and vegetables. The roots and leaves of the same plant are also widely used in cooking, and are considered spices in their own right, which the seed cannot replace.
